I am currently supporting dozens of Moodle sites, and am constantly updating and applying security patches to the individual sites. My first goal would be to backup your site to a test environment and would then look at applying the required fixes.

What I can tell: For the missing PHP extensions I would need SSH access for the server and can install them and enable. You have opcache disabled which can highly decrease server performance, after enabling it might solve your problem with slow performance when registering users. Table error - this is caused when upgrading moodle, did you upgrade your moodle recently in the past? I can change tables format in DB to Barracuda format which should also improve database queries. After solving these issues, if it won't help with general performance I will need server specifications, what drive is it runed on and if it has enough memory as moodle can be real memory eater. If it's ok and we still have a problem then I could install memcache server for optimizing.
