Modify UI and input forms for floreant POS

I need some modifications to the open source FloreantPOS. Im looking to simplify the customer data entry form to have the customers mobile number and customer name only. When the customers number is entered, if the number exists in the database, it will query the name and auto fill that box. Alternatively just a name can be entered in the customer information. There is a 'Require customer data' checkbox in order types, I would like the functionality of that field changed so that a customer name must be filled in before the order can be put on hold, sent to kitchen or paid. In the main menu I'd like to remove the 'Back office' and 'Kitchen display buttons' and the layout to be changed abit depending on the position of the buttons after the buttons removed. I would prefer to work with someone who has had previous experience with floreant pos or very experienced in java & MYSQL to complete this task.
