Script to convert contact details in the body of an email to populate the filds of an existing php form

I have a database of sales leads and I get an email for each enquiry and want to simplify the sales leads input to my sales leads table in the mySql database - I got 49 emails today

Is there a way to copy the text from this email and paste it into a single form field - and that would then submit to a script which would separate out the heading and the data convert it to populate an existing input form ?
It could take the first part and that could be the field name - and the second part could be the data -
then I can have it submit through a script / php file to pair the field names to the form felds which are required. ( I only need about 20 fields from the email data - not all of them )

The sales company sometimes change databases - so the structure of the email data does sometimes change - For example another data source may call business_name as company_name - so I need the option to be able to edit the php form to accept this.
