Make an icon based on existing logo (in attachment)

I need to create:
- a transparent favicon
- an icon of 53x65 px
It should be exactly the same as the logo attached, except that the color should be white (instead of green-brown), and the background should be transparent.
When I do an image resize in Photoshop, the quality is bad. This is why I am asking for your help.
