As per your description, I can design the circuit and write code. Or if you have circuit ready, I can directly write code. According to description, my first assumption is that this circuit may require two 8051 microcontrollers because to drive six 7-segment displays, additional microcontroller is needed. Multiplexing wont work because the speed of 8051 is slow for continuous refreshment of six displays. I have designed a similar project and I have experience in it.
