Hi There, It is nice little project. Well, not so little. I can design for you a little board with MCU and codec to record the mic-in. On top of it I will add everything need to be comfortable to use (and debug). PS Power can not be supplied from audio connector, since its audio amplifier for headphones. Hello. It is important in your project that is method to compress sound data. There are two ways. One is using vocoder chip. Other is using audio compressing firmware. First is simple and fast but later is small and cheap. If you are going to produce massively I recommend you choose second way. respect.
