Customise the listings in the PremiumPress Directory theme

The job involves modifying the Premium Press Directory Theme, which contains listings.
I have two type of listings:
1. Events, which are one-off events and have custom fields for the event's Start Date and End Date.
2. Classes, which are ongoing and have custom field for Day of the Week, Class Start Time and Class End Time.
- When someone is creating their listings I would like the relevant custom fields to show, depending on what category they choose.
- I would like my listings to display their custom fields.
- I would like my event search listings to be ordered by the custom field - Start Date
- I would also like the event listings to expire ones the Start Date has passed.
The details of the job have changed slightly so I am reposting it with the changes made in order to get the most accurate quote possible.

I have two type of listings:
1. Events (made up of multiple categories), which are one-off events with custom fields for the event's Start Date and End Date.
2. Classes (made up of one category), which are ongoing with custom fields for Day of the Week, Class Start Time and Class End Time
- I would like to be able to create listings packages that are restricted to specific listings categories, then the relevant custom fields will be displayed in the form when the user is creating the listing, and the relevant custom fields will then also display on the listings search pages and on the GoogleMap info bubbles
- I would like my event search listings to be ordered by the custom field - Start Date, and classes listings to be ordered by custom field - Day of the week
- I would like the event listings to expire ones the End Date has passed.
- I would like the listings count to be removed from the search widget.
- I would like the listing time and date format to be changed
I need all changes to be made in the child theme so I can update the core theme files.
