Asterisk and general Linux (Debian squeeze) server help

Our server has Debian Squeeze with an asterisk application on it.
We need some help on a few basics. Since I'd like to learn how to do these you must be open to showing me how to do these through a screen share program, and must have a stable enough internet connection to access this screen share and do voice communications (you must also be open to doing a voice call):
- The application created allows a user to register using his softphone. Once registered, user can press any key and press dial on the softphone to start his session where calls come in one at a time automatically based on a list uploaded (basically like 1:1 auto dial mode). We need to build in a simple function to press "0" to allow the call to be hung up. Currently, if the phone ring continuously, there is no way for the user to hang up the call.
- Currently we have a VOIP provider set in the system. I'd like to learn how to change this to another provider.
- We also have mail forwarding setup on the server, and it currently works using gmail, but I'd like to use a different email provider and want to know how to change the settings. Configuration is done using: dpkg-reconfigure exim4-config.
