I think making a meal replacement bar sounds interesting and feasible. What are your motivations? Are you looking to eat this yourself, or to sell the product at some later date?
I've created nutritional supplements in the past, such as a protein-iron brownie in 2014. I have a lot of experience baking and baking with ingredient restrictions, such as for people with celiac disease, egg allergy or for sports diets. As a varsity athlete in a weight restricted sport, I spend a lot of time working with macronutrient goals and meal planning.
In school, I've taken courses in sports nutrition, intermediate nutrition, advanced nutrition and cooking/meal preparation. I have a kitchen fully stocked with all of the high end mixers, pans and food processors that we might need. On a regular basis, I make protein supplement meals and low fat cookies.
I'm excited by the chance to exercise creativity in the kitchen while keeping the end product healthy.
