I am looking for someone that can create a formula for a full meal replacement bar. My idea was to take a full meal powder like soylent add a binder and flavor and extrude it into bar form. However I have no idea how to do this and the few " food science " experiments that I have attempted were failures. If you can help me it would be greatly appreciated. Ideally I would like a partner in the business.

Hello, I think making a meal replacement bar sounds interesting and feasible. What are your motivations? Are you looking to eat this yourself, or to sell the product at some later date? I've created nutritional supplements in the past, such as a protein-iron brownie in 2014. I have a lot of experience baking and baking with ingredient restrictions, such as for people with celiac disease, egg allergy or for sports diets. As a varsity athlete in a weight restricted sport, I spend a lot of time working with macronutrient goals and meal planning. In school, I've taken courses in sports nutrition, intermediate nutrition, advanced nutrition and cooking/meal preparation. I have a kitchen fully stocked with all of the high end mixers, pans and food processors that we might need. On a regular basis, I make protein supplement meals and low fat cookies. As both a food service consultant and nutrition scientist, I would be more than happy to assist you with coming up with a meal replacement bar. The reason I set the price so high is that I was assuming you are looking to create this bar for commercial purposes. If, however, you're simply looking for ideas to supplement your personal diet, please let me know. I have extensive cooking experience, a food science lab background, a staff of professional chefs, and full commercial kitchens to experiment ahead of delivery. Typically, for commercial projects, we would retain some rights to our intellectual property if recipes are involved. We would need to discuss this ahead of time but, in these cases, a lower rate may be negotiated upfront in exchange for minority equity allocation. We are all about building successful partnerships either between myself and a client looking to live a healthier lifestyle or my company and our clients looking to grow a successful food company. Hello, I find your project interesting. I am a chemical engineer with a PhD in chemistry. As a scientist I have lab experience to design experiments and compositions for chemical, pharmaceutical and food formulations. I work as a patent specialist in the National Patent Office of my country and as a biotech consultant for SMEs. My experience in industry has focused in the food sector, mainly in the dairy processes and prebiotic development, where I have developed high-protein powders for small companies, and design processes to concentrate lactoferrin from whey. I would like to know if you have a starting point on the minimum calories that your bar should contain and if you need a specific calorie ratio among carbohydrates, fats and protein. Do you have a preference over if your bar should have a cereal or protein base? Do you want it with a low glycemic index? with a quick energy supply? what is the target segment customer for your bar? do you want it have a crunchy or sticky feel?. I have contact with one of the most national renowned Food Science Research Center, where I worked, in order to coordinate test assays, for which I am sure, they will be much cheaper than in US. I may also work on a patentable nutritionally balanced food or beverage product if it is within your interest, in a different project.
